The goal of this Wiley Workshop is to increase your confidence, intuition, and independence when preserving fruits and vegetables. This workshop is taught by author Chelsea J. O'Leary at Patina Home and Garden.

This workshop is a greeting into the world of canning, pickling, and preserving. Join Chelsea at Patina Home and Garden to further understand home food preservation and the ways it deepens our relationship with ourselves and our food.

The aim of Introduction to Home Food Preservation is to understand the key concepts of canning, pickling, and preserving. We define, compare, and contrast the three major themes of home food preservation. We review scientific concepts such as heat, pressurization, pH, and why they matter, as well as safety and organization.

You will leave this workshop with a signed copy of Chelsea's Wiley Canning Company Cookbook and the foundational knowledge needed to understand exactly what is happening in your kitchen as you can, pickle, and preserve seasonal fruits and vegetables. In other words, you will leave this workshop with a sharpened intuition for this practice. Next, you will know exactly what to purchase or borrow to can, pickle, or preserve for the first time at home. Lastly, you will be ready to dive into your first recipe!

Chelsea J. O’Leary is the founder and owner of Wiley Canning Company. Through Wiley, Chelsea creates recipes and hosts workshops to teach others to can, pickle, and preserve. Chelsea also explores photography through both a film and digital format, and she is especially drawn to photographing fruits and vegetables. Her first book, The Wiley Canning Company Cookbook, is now available.

When she is not canning, pickling, preserving, or creating photographs, she values and seeks meaningful, curiosity-driven dialogue with others. She loves to write and run, in the woods or through the city, and she cherishes time spent with her husband, Jared, and son, Sullivan. You might find them at a local farmers market, park, or nearby wooded trail.

Chelsea holds a Bachelor of Science in Biology and Bachelor of Arts in Spanish and Latin American Studies from Otterbein University and a Food Product Development Certificate from Cornell University
