Join us for an afternoon of learning to make Dark Chocolate Raspberry Truffles! In this hands-on workshop, you'll discover the fundamentals of tempering chocolate—why it's important and how easy it can be in your own kitchen. You'll watch a demonstration of how to prepare the raspberry truffle filling, then hand-roll and enrobe your own truffles in rich dark chocolate. Along the way, you'll learn techniques and tips that will make recreating these delicious treats at home a breeze. By the end of the class, you'll have a deeper understanding of how chocolate works and the confidence to try it on your own.
Each participant will practice hand-dipping and garnishing their own truffles. You'll leave with recipe cards, helpful notes (including tips and tricks), and, of course, a box of your handmade truffles to enjoy at home!
Charcuterie will be provided for all guests, but if you would like a wine accompaniment, please be sure to select "YES" in the drop down menu above.
ABOUT THE TEACHER: This workshop will be led by Baker/Pastry Chef Aubrey Johnson. Aubrey holds a Bachelor's Degree in Baking and Pastry Arts and has trained and worked in France. She has also developed croissant and laminated pastry programs for several well-known bakeries and cafes throughout the East Coast. Most recently, Aubrey worked as a pastry chef on Maui, practicing the art of baking over live fire. With a passion for making pastry accessible and enjoyable, Aubrey’s goal is to empower her students with the skills and confidence to create beautiful desserts at home to share with friends and family.
